Recipe Monday: Pesto Flatbread

I have posted a VERY similar recipe {Penne Pesto Pasta} but I thought I would try something different with the same ingredients. I will start by saying, this never works out for me- usually I think, why did I mess with a good thing? This is a rare exception where I think the variation was just as good if not better than the origional. My EXTREMELY picky cousin came over for dinner the night I tried this out and went back for seconds- so I know it must be good!

{Here is everything you need +Mozzarella + Chicken (optional)- you can do rotisserie chicken or however you like it}

Here is what I did:
-Bake 3 boneless skinless chicken breasts- 350 degrees for 45 minutes-1 hr covered with foil (this time I used a little olive oil, chicken seasoning and some Italian Whole Wheat Bread Crumbs)
- Place the Naan or pita bread on a cookie sheet with a little olive oil drizzled over the top and bake on 350 for 5 min, spread pesto on and bake for another 5 minutes (no idea if this step is necessary- but it was yummy :)
- In a skillet, warm up sun-dried tomatoes and pine nuts on medium heat (no oil needed, they are with the tomatoes)
- place the chopped chicken, sun-dried tomatoes and pine nuts on the pesto flatbread and lightly sprinkle mozzarella cheese over the top. 
- Bake until the cheese is melted and pull it out
This is what came out (not sure if it looks as appetizing as it was...if only I would have taken photo classes in college, ha!- Delish!
